Contest and Cookies

Hello everyone, today I have a little Christmas contest for you. All you have to do is leave a comment and tell me what your favourite holiday cookie is and leave an email address. I would love to hear from all of my readers from around the world!

On Friday I will randomly draw 2 names to win a copy of January's Style at Home magazine featuring one of my favourite bloggers, Christine Dovey and a Christmas stocking made by Staci Edwards from Switch Studio. (There may also be a secret little present hidden in the stocking from Santa!)




 My favourite holiday cookie is Refrigerator Shortbread. 
I like this recipe because not only are they delicious with a cup of tea or coffee they are also super easy and very festive looking.

and bake
                      
Refrigerator Shortbread

Combine: 1 cup flour
                1/2 cup corn starch
                1/2 cup icing sugar
Crumble in with hands 3/4 cup soft butter until dough comes together.
Mix in 3/4 cup chopped glace cherries.

Shape dough into two logs (I like small cookies, so I make skinny logs), wrap in plastic wrap and refrigerate 4 hours or over night. Dough will last in fridge up to one month.
Cut into slices and bake on an ungreased cookie sheet for 7 or 8 minutes or until edges are lightly browned.

  1. I love baking all sorts of cookies but to me the epitome of Christmas cookies is shortbread from my Nana's recipe! Made them on Friday and I think another batch will be in order soon!
