Summer Pie

Whether you call this a galette, free form pie, rustic tart or plain old pie, you will for sure enjoy how utterly simple it is to make and how delicious it is to eat...add a scoop of vanilla ice cream or whipped cream and you are set for dessert tonight!




Rustic Berry Pie

2 frozen pie shells
4 1/2 cups frozen berries (I used a 4 berry mix)
2 tbsp cornstarch
3 tbsp sugar
milk
demerara sugar

Thaw 2 frozen pie shells.

Preheat oven to 375 degrees.

Mix the frozen berries with the cornstarch and sugar, set aside.

Place pie shells one on top of the other on a floured surface and roll out to form a circle approximately 18-inches round. Transfer to a parchment lined cookie sheet.

Mound the berry mixture in center of dough, leaving about a 3 inch boarder. Fold up dough in small sections going around pie.
Brush dough with a little milk and sprinkle with demerara sugar.

Bake in center of oven for 30-40 minutes or until golden brown. Serve warm or at room temperature.
